Watercress Salad Topper for Laughing Eggs
2 hard boiled eggs split
1/2 cup chopped watercress, leaves and lighter portion of chopped stems
2 teas tomato, seeded and diced
squeeze of fresh lemon
pinch of smoked paprika
cracked sunflower seeds (optional)
Stir it all together. Top egg halves evenly. Sprinkle on a pinch or more smoked paprika and sunflower seeds to taste.
